为给大家补充身体营养,强身健体,今天阿飞给大家分享沿用宫保鸡丁的做法,做焦香酥脆吃起来超级过瘾的宫爆虾球,因为虾子全身是宝,富含蛋白质、钙,不管是孩子、老年人还是身体虚弱的人来说都是滋补担当的美食~
——宫爆虾球美味之技巧——
1、虾仁下锅后,大火快速爆炒,肉质更嫩,不宜时间过久,过久肉质会变硬
2、调料、主料、辅料依次放入,颠翻均匀即可
3、 将虾子去皮、去头留尾
【宫爆虾球】特点—虾肉辣香滑嫩,下饭超过瘾
材料准备:
【主料】大虾500克
【配料】鸡蛋/油炸花生米/葱
【配料】食盐1克/胡椒粉1克/料酒10克/白糖10克/味精1克/生抽10克/陈醋5克/淀粉/麻椒/干辣椒

之一步:处理我们准备大虾500克,把虾头切掉,在虾背上划一刀,方便入味,剔除虾线,剥掉虾壳,把虾仁取出来,放入清水中,抓洗干净,挤干虾仁上的水分,放入盆中准备腌制~

第二步:腌制加入食盐1克,胡椒粉1克,料酒10克去腥,抓拌均匀,打入半个蛋清,蛋清不用太多,虾仁入锅后会有多余的蛋白,影响菜品的外观,撒入一小把干淀粉,再次拌匀后腌制10分钟~
阿飞唠叨:淀粉能够锁住虾仁的水分,保持鲜嫩的口感
第三步:备料准备麻椒一小把,干辣椒一小把,油炸花生米100克,大葱白一段,切成圈备用接着盆中加入食盐1克,白糖10克,味精1克,胡椒粉1克,料酒10克去腥,生抽10克,陈醋5克,再加入少许水淀粉,搅拌均匀备用~
阿飞唠叨:水淀粉搅拌要多搅动几下,防止淀粉沉淀在底部
第四步:炸虾食材全部准备好以后,我们开始炸虾仁,锅内烧油,油温升至五成热时起锅,把虾仁倒入锅中,利用余热把虾仁炸定型,虾仁刚刚变红时倒出控油~
第五步:出锅锅内留底油,油烧热以后,倒入麻椒 干辣椒,开小火翻炒出香辣味,把控过油的虾仁放入锅中,倒入碗料、葱花和花生米,转大火快速翻炒入味后即可出锅装盘~
