上海人家的菜肉馄饨是一道点心,是一抹温情,是一缕馨香,又是埋在心底的姆妈的咪道。
老底子弄堂里,上海人家几乎每家人家隔一段时间都会包一顿馄饨来吃吃。
记得小时候,邻里间谁家包馄饨了,都会给邻居端上一碗,吃了这家吃那家,小小的一碗馄饨中飘逸着淡淡的温情。
这样的温情如空气中的花香时时会飘散在窄小的厨房角落。
有了冰箱以后,上海人家的冰箱里都会储存一些自家包的菜肉馄饨。
当你身心疲惫、自觉慵懒、胃口不佳抑或身体不适的时候,冰箱里的馄饨会为你带来一丝方便和温暖。


馄饨有多种吃法。冬天,下汤馄饨,汤里放些葱花,紫菜和小虾米一碗热腾腾的馄饨,立刻让你身心暖和;夏天,做冷馄饨,馄饨下好后,放冷开水浸一下,撩起来,调点花生酱,辣油拌一下,弄杯可乐或者其他冷饮,一盘冷馄饨后,身心顿觉凉爽;春秋天,爱怎么吃就怎么吃,如我,就是干馄饨,配了杯咖啡 ,咸甜相宜,真得很嗲了!这也是上海人酷爱菜肉馄饨的一大缘由。

今天我想介绍一下,阿拉姆妈传给我们拌馄饨馅的秘诀,我的馄饨馅拌的特别好。在我这里已经包了几十年了。
今天我包馄饨的比例是:

二斤五花肉,一斤荠菜二斤青菜(荠菜、青菜缩水严重 ,喜欢菜多一点,所以买了三斤。),三斤馄饨皮子。
一、先拌肉的馅:

1、肉上放些许切细的葱末、姜末,加点酒,拍两个鸡蛋,加盐,放点糖,糖是吊鲜味的

2、要熬一点油,把热油浇在葱和姜上面,这样姜和葱的香味就会渗透到肉里,解肉味。

3、油浇好以后,用筷子拌料,顺一个方向搅拌,中途适当的浇一点水。

4、肉馅拌好以后,就用保鲜膜把肉包起来,放在冰箱冷藏室两小时以上。

二、处理菜:

1、在切菜之前,要把菜焯一下,在烧开的水里面要放两调羹盐,这样焯出来菜是碧绿生青的,到馄饨烧好以后,菜也是碧绿生青。

2、焯的辰光,先放荠菜,荠菜比较嫩,稍微撩一撩就要盛起来,放在冷水里。青菜可以稍微时间长一点。

3、切好的菜,放器具里拌,加点盐,加点油茶籽油一起拌 (更好不要放花生油,橄榄油,麻油,这些油会夺味,建议:茶籽油、菜籽油、葵花籽油)。

4、菜馅拌好后,把肉放在一起拌。菜和肉一起拌了差不多了 ,就盛起来,可以去包馄饨了。

这样处理的馅,烧好的馄饨,里面的菜依然碧绿生青。

下面所有图片都是我自己亲 *** 摄,由于视频是晚上拍摄的,所以不是很清晰。

1、首先煮大骨汤,直接冷水下锅,再加入生姜片。烧开后把里面的浮沫捞出来,加点米醋和料酒,,中小火炖大约1个半小时左右

2、肉馅我用的是后腿肉,我看视频里网友评论说用前腿肉好些。还有肉馅里我习惯加了点葱姜沫进去,还有网友说吃不了生姜咋办?这个可以用葱姜水代替。老一辈的人传下来一句话是:冬吃萝卜、夏吃姜,所以我觉得还是要吃点生姜对身体好些。

肉剁好后,切点葱沫和生姜沫,肉馅里加入盐、白糖和糯米粉,料酒、生抽、十三香,鸡蛋清一个。觉得干的话,再稍微加点水朝一 个方向不停的搅拌

3、馄饨好吃, *** 葱油也是关键。再切点葱姜蒜和香菜,油锅里放一个八角,加入葱姜蒜倒进去炸香,然后加十三香和白胡椒粉拌匀

大概30秒左右,把大料捞出来,把炒过的油也倒碗里备用.

4、捏馄饨的时候可以在手上沾点水,这样捏的时候好捏,捏馄饨我没有捏传统的那种元宝形状的馄饨。我用的是另一种 *** ,馄饨捏的像一个个钱袋子样子。这样馄饨里面包的肉馅比较大。皮薄馅大。馄饨皮的 *** 视频可以看下我7月28日发布的视频。下面我截图一张图看看,做出来馄饨皮皮薄如纸,透明、筋道

5、煮馄饨 调个底汤

碗里加盐、白胡椒粉、紫菜、虾米、香菜、再加入刚才炒的葱油、少量的生抽

碗里浇上熬好的骨头汤、然后馄饨盛入碗中,最后滴几滴香油
