在开始正式 *** 之前呢,我们首先需要准备以下食材:五花肉1000克,八角3棵,桂皮2块,香叶5片,干辣椒5个,生姜1块,葱白2截,冰糖40克,葱花适量,生抽2汤匙,老抽1茶匙,食盐1茶匙,料酒2汤匙
之一步:先将五花肉清洗干净,再冷水放入锅中,放入生姜的边角料和几个葱片,加入2汤匙的料酒去腥增香,然后盖上锅盖,开火将五花肉煮熟!
第二步:等五花肉煮熟之后,捞出放凉至不烫手,再根据自己的喜好,改刀切成均匀大小的长方条,但不建议切得太小块,煮熟的五花肉比较好切,形状也能切的比较方正,切好的五花肉装入盘中备用。再把准备好的生姜、香葱白等配料切片,装盘备用。
第三步:起锅烧热,将切好的五花肉一块一块地放入锅中,煎至六面焦黄,将五花肉的部分油脂煎出来,再盛出备用。
第四步:盛出大部分的猪油,留底油,再放入40克冰糖,小火慢炒,将冰糖炒化,炒成糖色,再放入约750毫升的开水,再放入煎好的五花肉,放入配料(生姜、葱白、八角、桂皮、香叶、干辣椒),然后盖上锅盖,大火煮开之后,再转成小火慢炖45分钟。
第五步:炖好之后,锅里的汤汁所剩不多了,用筷子夹出香料,然后转成大火收汁,收汁的时候记得边烧边用锅铲搅动,防止糊锅了,等到汤汁浓稠裹到五花肉上面时,就可以出锅装盘了,最后撒上葱花即可!
