五花肉1500g生抽90g老抽70g盐50g冰糖30g白酒30g花椒八角适量
自制腊肉的做法
- 五花肉洗净,晾干。放入盒子里
2生抽90g,老抽70g,盐50g,冰糖30g,白酒30g,花椒,八角适量拌匀后倒入五花肉,盖盖摇晃拌匀
3约腌制3-4天,取出,置阴凉干燥处阴干。图为过了一夜
4再过一天后,稍见发亮
5过了两三天,见肉收紧,稍稍出油
6约一周后,可见泛出很多油,就可以了
7取一块洗净,放盘上,入蒸锅蒸30-40分钟
8切片即可直接食用
9也可做腊肉饭或是别的
小贴士
1.个人觉得,稍瘦一点的肉比较好。
2.盐量根据自己口味。此盐量口感比传统的那种腊肉会淡一些。
3.若喜欢稍甜口感,适量再多加糖。
4.白酒可换红酒或是玫瑰露,颜色会更好。
5.蒸好后的白肉部分会变得非常透明。不用烟熏的腊肉味道一样很香。

【腊肉炖粉条】——肉质有嚼劲 好吃下饭
腊肉炖粉条的完美搭配,粉条吸收了腊肉的鲜香,腊肉也变得更加嚼劲十足,好吃不腻还更入味,做法上更讲究选料,火候~
材料准备:
【主料】腊肉500克
【配料】粉条一把/白菜一颗/大葱/生姜八角/干红辣椒/香菜
【调料】食盐2克/味精2克/鸡粉2克/胡椒粉2克/老抽3克
——【具体 *** *** 】——
之一步:备菜准备 腊肉500克,切成2毫米厚的肉片,装入盆中,准备粉条一把 放入盆中,倒入开水 浸泡1个小时~
第二步:清理白菜准备白菜一颗,切去根部,然后把白菜从中间切开,分别把菜叶、菜帮切成小片 分别装入一个盘中~
第三步:配料准备大葱一小段,切成马蹄片,生姜一块切成菱形片,一起放入小盆中,再抓入八角1粒,干红辣椒3克,最后再把泡发好的粉条捞出装入盘中~
第四步:烹饪锅内加入适量的植物油,充分滑锅以后 倒入腊肉,翻炒出香味,炒至八成熟,倒入葱姜片继续翻炒~
第五步:调味倒入白菜帮 翻炒至八成熟,白菜帮先炒一下,口感上会更香一点,再倒入菜叶继续翻炒,淋入生抽5克,沿锅边加入清水,粉条比较吸水,所以多放一点,放入食盐2克、味精2克、鸡粉2克、胡椒粉2克,翻炒一下 把调料化开后,盖上锅盖焖煮5分钟~~
第六步:出锅5分钟后倒入已经泡软的粉条,再放入老抽3克上色,把色泽调均匀以后,然后倒入砂锅中,用小火焖炖10分钟,10分钟后 撒上香菜段,淋入少量香油,即可上桌食用~

在湖南,腊肠是每年过年前都要 *** 的食品,虽然现在一年中的任何时候都可以吃到腊肠了,但是过年吃到的自制的腊肠才是更好吃的。每到农历冬月,各家各户总会采购大量新鲜的五花猪肉进行腌腊或风干,以将肉类保存。
在湖南人的年味里,必须要有一碗腊味合蒸。在湖南的美食王国里,腊味应该是年味当之无愧的代表,虽然今年猪肉价格一路飙升,但是过年还是要有点腊味才韵味。
走在大街小巷里,随处可望到各家的窗台、阳台、晒场上一片片沐浴在阳光中的腊肉,空气里也开始弥漫年的味道,散发出浓郁香气,令人垂涎欲滴。
俗话说:“小雪腌菜,大雪腌肉”,每年到了大雪节气,很多湖南的农村里,家家户户都忙着腌制腊肉腊肠,这是因为大雪前后,气候相对干燥,较低的气温也利于保存,腊肉的风味形成的品质更高,口感更佳。
湖南的腊肉一般除了腌制、风干外,还要进行烟熏的古老 *** 。烟熏的腊味有一种特有的香味,吃的时候在口中回味悠长,绵长而诱人。是美味十足的下饭的好菜。
熏好的腊肉,表里一致,色泽鲜艳,黄里透红。煮熟了切成片后可直接放入蒸锅加热即食,或是配上辣椒、酸菜等配菜小炒出锅。吃起来味道醇香,肥不腻口,瘦不塞牙,极具特色风味。
下面分享一下烟熏腊肉的家常版做法:
1.将五花肉洗净后,切成大小适宜的长条块状。然后加入高度白酒,反复揉搓几分钟备用,这个步骤要使猪肉各个部位充分接触到白酒,主要作用是防腐增香。
2、炒制盐腌料。热锅内放入粗盐、花椒、茴香等,小火炒至盐变色,调味料香味浓郁后盛出,自然放凉后把炒好的腌料倒入肉条中,用反复揉搓涂抹均匀。
3、把腌肉放入保鲜盒内或盆内,表面覆盖一层保鲜膜,放入冰箱冷藏,一般需要腌制一星期左右,中间可以隔天翻动一次,倒去渗出的水分,使其充分腌渍入味。
4、把腌渍好的肉条在一端穿粗棉绳并打结,然后悬挂于阴凉通风处,晾晒干。
5、收回晾晒好的肉条,用香柏枝、木柴等焖烧出的柴烟自然烟熏。没条件室外熏的话,可以在家里搁置一个烤箱网架,把肉条摆放在上面,保留足够的间隙,也能 *** 。
6、熏好的腊肉自然放凉,短期食用,自然存放即可。想长期存放,装保鲜袋,放冰箱冷冻室。如果有真空抽空设备,真空保鲜更佳。
