应老铁们要求,老式糯米粉油炸糕详细教程来了,采用新式做...·在盆中加入一斤糯米粉,加入两小勺猪油,加猪油会更加酥脆。然后加入少许炒菜油和白糖,炸油糕容易上色均匀。
·将一斤糯米粉倒入320毫升开水中,边倒入边搅拌成面絮。搅拌成面絮后倒入台面上,切成小块放凉。根据粉丝的要求,我调制了红糖馅。在碗中加入红糖和适量面粉,面粉要多加一点以防流糖汁。
·加入少许熟芝麻和适量炒菜油,以达到馅料黏糊糊的状态。多翻拌均匀,像这样有黏黏的状态备用。
·将放凉的糯米面团撒上两把干面粉,倒入适量的炒菜油,用手抓揉至完全与面团融合,多揉搓很重要。约3分钟左右,像这样不粘手状态。整理成圆形面团,盖上小盆醒面10分钟左右。10分钟后分切成两小块,放便操作,很容易就能搓成长条,切成大小均匀的小剂子,竖起来按扁一点备用。需要盖上保鲜膜防干皮。
·取一个更先弄好的剂子,手和面剂子都要抹油防粘,填入红糖馅,按照视频的手法包好收口,再按扁一些,中间别按压太紧实,这样容易炸透。每做好一个,还需要抹点油,这样放在台面上不会粘底。盖上保鲜膜放干皮。
·油温6成热入锅炸,待底部定型再翻动。糯米粉做的炸糕需要轻轻转动和翻动,这个糕比较糯容易黏软,炸的过程多翻面至金黄。像这样表面金黄酥脆,外皮又有大小泡泡就可以了。
这个传统老式特色炸油糕我采用了新式做法,放凉5小时也不会软,表面全是大小泡泡,炸成这样的状态更加酥脆。比起小麦粉做的炸油糕口感大不相同,你更喜欢吃哪一种。老铁们喜欢的话,跟着视频一起做起来吧。
