大虾、萝卜、大蒜、小葱、生姜、生抽、白胡椒粉、料酒
4、先把大虾用清水多清洗几遍,清洗干净以后捞出控干水分装入盘中,再把虾头掰开,虾线就跟着出来了,再把虾胃去除,虾头留在盘中备用
5、再把虾胃腌制下,先放入一勺食盐、料酒、胡椒粉,抓匀腌制十五分钟备用。萝卜削去外皮,切去两头,再从当中切开,然后给它切成薄片,平铺在砂锅中,再把腌好的大虾也放进去
6、蒜子切片,生姜切片,香葱切成葱段,放入盘中,热锅倒油,放入虾头翻炒炒出虾油,再放入葱姜蒜炒出香味,炒香后加点清水,再加入一勺食盐、生抽,胡椒粉,搅拌均匀,盖上盖子烧三分钟
7、时间到时,把汤汁过滤出来。再把汤汁倒入砂锅中,盖上盖子大火烧开,中小火焖八分钟就可以了。时间到时,放点香菜点缀就可以开吃了

小龙虾、生姜、大蒜、干辣椒、八角、桂皮、花椒粒、郫县豆瓣酱、火锅底料、香辣酱、料酒、蚝油、生抽、老抽、白糖、啤酒、螺丝椒
4、先把小龙虾用清水清洗干净,用刷子多刷一下,再把虾线拉出来,剪去虾腿,剪去虾头去除虾胃,虾嘴也剪干净,虾就处理好了。再把龙虾摆在流失底下冲洗一下,冲的时候用手挡一下,不要把虾黄冲出来
5、再把生姜切片,螺丝椒去蒂切滚刀块,蒜子压扁斩成蒜末,干辣椒切小段,放入花椒、八角、桂皮碗中。热锅倒入菜籽油,油热后放入一勺郫县豆瓣酱、火锅底料、两勺香辣酱炒出红油
6、再把大料也放进去,把香味炒出来,再放入蒜末炒香,炒香后放入龙虾一起翻炒,炒的时候尽量轻一点,不要把龙虾的黄炒出来,再淋入料酒去腥、生抽提鲜、老抽上色、蚝油、两勺白糖提鲜,翻炒均匀,盐就不用放了,因为调料是咸的
7、再倒入一瓶啤酒,盖上锅盖,中小火焖十分钟。时间到时,把螺丝椒和姜片也放进去,把螺丝椒压到汤里面,烧制断生就可以装盆了
