记之一次做锅包肉,视频有点长,总想说的更清楚一点锅包肉上桌啦!先来听一下声音,非常酥脆好吃!
·选取猪里脊,从中间斜切成长三角形,不要太薄也不要太厚。将每一片肉用刀背拍打,我发现有些教程不需要拍打。
·清洗后,将肉放入清水中浸泡,加入少量胡椒粉腌制。将大葱切成细丝。
·准备一些配菜,碗汁也很重要。取2勺白糖、2勺9度米醋和1勺生抽,比例为1:1:1,再加入少量香油拌匀。我发现有些教程还加入了香油。将土豆淀粉加入清水中,搅拌至淀粉与水分离,然后倒掉上面的清水,留下下面的淀粉。将淀粉均匀地涂在肉上,然后加入少量油,再次拌匀。我发现有些教程不需要加油。
·将肉放入水中浸泡至少半小时,让淀粉和水充分融合。将肉放入油锅中,用筷子测试油温,当筷子周围有小气泡时,说明油温适中。将肉放入锅中,用筷子将肉铺平,等待肉定型后,用筷子轻轻搅拌。之一次炸的时间不要太长,颜色不要太深。我将肉分成两锅炸,等所有的肉都炸好后,捞出。
·将油温提高至7成热,再次放入肉,炸至深红色,捞出。将肉放入漏勺中,用手轻轻颠动,可以感觉到肉已经非常脆了。最后一步,我的锅不方便颠勺,所以我用了一个不颠勺的 *** 。将配菜放入锅中炒匀,再加入碗汁,煮至粘稠后加入肉,翻炒均匀。我发现我的肉炒过头了,可以先将肉放入锅中,再加入配菜,这样会更好。可以上桌享用啦!
