这是在超市花了30块钱买的黑鱼,店家已经将鱼肉片好。先将鱼骨撒上盐,用手抓拌均匀,腌制10分钟。接着,将鱼片放上盐、料酒和土豆淀粉,抓拌均匀后,打入鸡蛋清,继续抓拌至均匀。这一步非常关键,要多抓拌一会,让蛋液和淀粉完全裹住鱼片,这样鱼片才不会碎,也不会浑汤,做出来的鱼才滑嫩筋道。搅拌好后,放置10分钟。
接着,将酸菜切成3公分的小片,放入盆中,再切一些葱丝和姜丝放入碗中。
全部准备就绪后,起锅烧油,油热后将锅掂起转两圈,润锅后放入鱼骨。此时,不要移动鱼骨,但可以转动铁锅,使锅底受热更加均匀。煎至鱼骨两面金黄后,加入提前准备好的开水。调汤时要保持中高火,煮约5-6分钟。先将鱼骨捞出放入大碗中,再将酸菜放入锅中,加入盐、味精和胡椒粉调味,煮几十秒后捞出放入鱼盆中。然后,将鱼片一片一片地放入锅中,用铲子轻轻推动,煮2分钟后捞出放入鱼盆中,最后将鱼汤倒入锅中。最后,将炸好的辣椒、花椒和热油泼入锅中。这一步非常关键,可以提升鱼肉的整体味道。撒上翠绿的小葱花后,即可享用美味的酸菜鱼了。这道菜既美味又下饭,非常适合喝酒。

之一次做柠檬酸菜鱼 没有翻车 老婆说比外面买的好吃#谁是A醇大佬柠檬酸菜鱼。周末逛商场吃了一道这个柠檬酸菜鱼,感觉不是现点现做的比较像现在很火的预制菜,都觉得味道还好。今天我就复刻出来,配料准备好了。这些处理鱼的部分建议不会的小伙伴可以让卖鱼的帮你处理一下。在我们南方卖鱼的老板都会有这种服务,做这一步的时候千万要小心,不要搞到手了,那就得不偿失。
把所有的鱼骨部分都剔出来,分开鱼骨和鱼肉。把鱼肉斜刀片成片,具体的厚度因人而异。总之不要太薄就好。给鱼肉上浆腌制一小勺盐、少许料酒、胡椒粉,再打入一个蛋清,多抓拌几下,抓到粘手浓稠的状态。加入多一点的玉米淀粉包裹在鱼的表面。锅烧热放入酸菜。这酸菜是我自己做的做法视频在前面盛出备用。
锅里加入猪油,放入一点点的盐,确保煎的时候不会粘锅。下入所有的鱼块,摊开每一块都煎到,煎到两面都这样焦黄,这一步可以去除鱼的腥味。
真香酸菜鱼的鱼汤就靠这个来提鲜,煎焦后盛出备用。再次加入点猪油,酸菜下锅煸香,再下入姜末和一点剁辣椒酱,炒匀炒香,再把鱼骨倒入煸炒,翻拌均匀后加入足够的开水,大火煮5分钟,煮到汤是那种奶白色。中途加两勺盐,挤一点柠檬汁,煮到像这个颜色,把鱼骨捞出。剩下的鱼汤不用开火,慢慢的把鱼肉一片一片的放下去,放完再开大火煮开,中途只要这样轻轻的推就可以了。
再倒入预热好的砂锅,撒上葱花摆上柠檬,撒上蒜末、几粒辣椒段、一小把白芝麻,浇上热油激发香味。这道柠檬酸菜鱼就这样出锅喽。谢谢观看!
